There is so much to love about this place, but you have to pre-plan ahead and book. 

It is a tiny 8 x tables place and regularly is booked out. 

The coffee syphon is such a cool theatre piece to watch and provides such depth of flavour, that is smokey and aromatic. 

So the broth is the hero of the dish here. Noodles are slightly hard and chewy. 

Toppings include melt-in-your-mouth chicken chashu and pork also, menma (bamboo) and springions. Such a great bowl - smashed it.
