Bowl 171 ~ Tori Paitan. Rising Sun Workshop, Newtown.
A cold snap has bedded down in Sydney, and you surely know that means RAMEN SEASON IS HERE!
Rising Sun have announced they will be doing a few specials over the colder season for lunch – this one limited to 25 bowls per day. I got there early today, but Nick was nice enough to make a bowl for me anyways!
Is an all chicken thick broth that is very silky smooth and refined well. The ‘Gyofun’ (fish salt was a clever extr component to dunk through the bowl and let the flavours combine and grow stronger as you work down through it. Sobrasada is a salami type paste and it was rolled up into the chicken and then the whole thing deep fried!! I am not normally such a chicken chashu lover, but this was the bomb!
Other toppings included a perfect example of ajitama (egg), menma (bamboo shoots) and red onion diced finely. $25 is a slightly higher price tag to pay, but in my opinion it was well worth it.
