Bowl 153 ~ Niboshi (dried sardine) Ramen. Umami Dojo Ramen, Pyrmont, Sydney 🍜 

This was a seriously legit bowl! A lot of people raving about this new place, and I can really see why. There is basically nowhere else in Sydney doing this style of ramen, as perhaps the “fishy” thing scares people off? Not sure. But more of it I say! 

A real clean, mild flavoured bowl with so much umami in the layers of deep understated depths here. Shoyu tare. Chicken bone broth and a dashi (double soup) made from 2 types of dried sardines and kombu. The coffee siphon for the katsuo is such a cool visual thing too. 

Toppings were also something not often seen in Sydney bowls: sous vide style chicken and pork chashu - super yum! proper menma (bamboo) and springions. Left feeling deeply satisfied, but not like I need to roll around in a food coma for hours afterwards! Can’t wait to go back here soon.
