Bowl 137 ~ Tonkotsu Shoyu Ramen. Sekka Dining. St Leonards, Sydney 🍜 

WOWOWOW – OMG!! I got a sneak peek today into a brand-new AMAZING shop (opening up next week) in St Leonards, North Sydney, and the Ramen was incredible! 

The brainchild of Chef Hydeman, Sekka Dining will have Ramen, Yakitori, Sake & Wine. The Ramen was super delicious! One of the best bowls of Tonkotsu I have had for a long time (in Australia!) Broth was a deep and rich, bold flavour, but refined at the same time - made entirely from pork head only, there are no other bone parts used like in many Tonkotsu broths. Noodles are the same recipe and manufacture as used at Manpuku – perfect on the bite, and well paired for this broth consistency too. 

The chashu is boiled and seasoned, and then just before serving it is put under an intense hot grill to sear up, the same grill that will be used to make the yakitori too – a cool technique and made for amazingly tasty chashu also! 

Other toppings included raw onion, which helped cut through the bold broth, seasoned menma, and a perfectly jammy ajitama!! I can’t begin to tell you how incredibly lucky (#blessed) I feel being invited in to taste this Ramen today! They are hoping to open the restaurant next week (Wed June 17), and might have uber takeaway as soon as this week too.
