No trip to the birthplace of Hakata style Ramen (Fukuoka) would be complete without visiting one of the legendary local shops.
They have several locations all over the city, but I had to go to the OG spot.
The walls are covered in signatures of famous people from Japan (hilariously in plastic wrap).

Broth was almost a bit sweet in taste with zero pork funk. Noodles were ultra-thin, and super long too.
Basic toppings, but you can upgrade your bowl with extras such as egg, chashu, etc. There are also a tonne of other non-Ramen dishes on the menu.
There are plenty of accoutrements on your table also including, garlic, sesame seeds, oils and this bomb chilli-crisp.
